Sumatran coffees are renowned for their low acidity, intense earthy character, and heavy body. For these reasons, Sumatra is our favorite option for dark-roasted single origin coffee. Medium roasting best preserves the origin characteristics of this coffee, yielding a complex cup marked by notes of dried fruits and spices. This profile is quite different from the South American flavors that most coffee drinkers are accustomed to. Darker roasting develops notes of sweet pipe tobacco and baker's chocolate, also resulting in a cup with immense body and smooth mouthfeel.

 

Two factors are responsible for this coffee's unique flavors--the soil and the processing. Sumatra is a volcanic Island in Indonesia, so its rich soil imparts just enough acidity to provide vibrancy while allowing the coffee to remain very smooth (and easy on the stomach.) Because of the humid and rainy climate, typical drying processes used everywhere else in the world are ineffective in Sumatra. Instead, the coffee cherries are processed via wet-hulling, a method that amplifies body and mellows acidity in coffees.
