Light-roasted coffees retain their unique, distinctive origin characteristics more than any other roast level. For this reason, a light roast blend is both the most challenging and rewarding coffee to craft. In creating Early Bird, we aimed at producing a coffee that would turn medium and dark roast drinkers toward the light. We wanted this blend to have invigorating brightness, but with the acidity rounded out by sweetness, complex bittering notes, and heavy body.
We found just what we were looking for in two of our favorite washed coffees from East Africa. During roasting, we develop the beans just enough to tease out sweetness, notes of chocolate, and subtle roast tones. We keep the roast light enough preserve the beautiful, lemon-lime citrus brightness that makes these coffees so desirable. The result is a wonderfully balanced and easy-drinking coffee that will still satisfy the connoisseur.
This is a top pick for pour overs and does well as a french press. If you like intense, mouth-puckering espressos, then this blend does better than almost any other light roast we've had!
